Cambridge Bora Chef's Table

We hosted a fun dinner last week at our Roundhouse Cambridge showroom partnering with Bora as part of our series of Chef’s Table’s for architects and interior designers. A delicious three course dinner was prepared and cooked in front of our guests by a chef from Bora using their teppanyaki grill and clever downdraft extractor. Instead of letting cooking vapours and odours rise in the first place, Bora cooktop extractors draw them away where they are created, directly extracting them from the pot, roaster, pan or grill on the cooktop. Guests enjoyed a relaxed evening learning more about our Roundhouse bespoke kitchens and furniture and meeting our Roundhouse designers.

Ingredients

50g spelt flour 

100g unsalted butter  

40g rolled oats

50g hazelnuts

50g pecans

30g pumpkin seeds 

1 tsp ground cinnamon

1/2 tsp ground ginger 

1/2 ground star anise 

150g caster sugar

sea salt flakes

4 green apples, peeled, quartered and cored

75ml double cream

Creme fraiche, to serve

Method

Heat the oven to 190C/170C fan/gas 5

Tip the flour and 50g cubed butter into a deep mixing bowl, using the Bamix C blade pulse the mixture on a low speed until the texture resembles breadcrumbs. Add the oats, ginger, star anise, cinnamon and sea salt flakes. In the Bamix grinder add the nuts and pulse until roughly chopped. Add these to the crumble mixture and mix. 

Line a baking tray with baking paper and tip in the mixture, spreading to an even layer. Bake for 20 mins, tossing halfway, until golden. Leave to cool. Turn down the oven to 150C/130C fan/gas 3.

Tip the sugar into a frying pan in an even layer and cook over a medium heat until dissolved – do not stir the pan, only swirl to move the sugar around. Once dissolved, turn up the heat and cook until a caramel forms the colour of a rusty penny. 

Carefully add the remaining 50g of butter and swirl to dissolve. Turn down the heat to low and add the apples. Cook for 10-15 mins, turning the apple pieces regularly to cook evenly and coat in the caramel. Line a tray with baking paper and spread out the apple pieces with a little of the caramel. Bake for 30 mins until fudgy and caramelised.

Pour the cream into the caramel pan and cook over a medium heat until it forms a smooth drizzle-able caramel sauce.

To serve, put the apple pieces on a plate, add a dollop of creme fraiche scatter over plenty of the crumble mixture and drizzle with the caramel sauce.
