Natural set yoghurt

Here’s a quick recipe for delicious homemade natural set yoghurt, courtesy of Amy, the Roundhouse kitchen coach. Tried and tested in a Roundhouse bespoke kitchen, Amy says this is so easy, particularly if you have a warming drawer in your Roundhouse kitchen. If not she’s included instructions for any fan oven, combination microwave or steam oven.IMG_7268
Natural Set Yoghurt
Ingredients
1 litre full-fat milk
3 tbsp live natural yoghurt
 Method

  1. In a large saucepan, bring the milk to almost boiling point, then remove from the heat.
  2. Allow the milk to cool to warm body temperature (44-45°C).
  3. Thin the yoghurt with a little of the milk, then whisk the thinned yoghurt into the remaining milk.
  4. Cover with a lid and place in a warming drawer on it’s lowest setting (this is around 40°C) for 10-12 hours. Avoid the temptation of checking the yoghurt too often! It will set better if left undisturbed.

**If you don’t have a warming drawer, use a low Fan oven at 40°C. Don’t forget – any Combination Microwave or Steam Oven also has a Fan facility, and a smaller appliance means less energy used**
