Waste not, want not
Avoiding waste is on the front pages of national newspapers on a regular basis and recently one of our own collaborators, Marco Kesseler had a series of photographs of big-name chefs featured in an exhibition highlighting the issue and which was subsequently featured in the Guardian.
Marco is a talented photographer who occasionally helps us out and you can see the results of his visits to several restaurants to see how top chefs tackle the problem here;
